Hypothyroidism Diet Recipe: Banana Brazil Nuts Pancakes

These delicious pancakes make everyone around the dining table go bananas!

Serves Four

Ingredients:

1 large ripe banana

1 tsp vanilla

2 eggs, large

3 tbsp melted unsalted organic butter

1 ½ c rice milk

¼ tsp salt

½ tsp baking soda

1 ½ tsp baking powder

1 tbsp honey

1 ½ cups flour, gluten free

Maple syrup to accompany the dish

Directions

In a bowl, whisk together salt, baking soda, baking powder and flour. In another bowl, whisk together eggs, 2 tbsp melted butter, buttermilk, honey and vanilla until fully integrated. Blend this thoroughly and flour mixture. Along with nuts, blend the mashed banana into the batter. Use remaining butter and brush this over a pan made of cast iron and heat over medium flame. Cook pancakes according to the size you want buy pouring batter by batches. You will know they are cooked when bubbles appear on the surface. Turn and cook an extra 2 minutes until it is brown and golden. As an upgrade, you can add other nutritious nuts and fruits into the pancakes. Experiment with almonds, apples, nuts, pecans, apricots.

Hypothyroidism Diet Recipe: Vegetable Confetti with Fried Eggs

An exciting, colourful dish, this recipe makes a great meal for guests just in time for lunch. Of course, it also makes a wonderful treat full of nutrition just for you. As an upgrade to the dish, you can also enhance its flavour by adding a fresh variety of herbs from the garden. Serves Four

Ingredients

8 Large Eggs

½ cup of fresh cilantro coarsely chopped

1 pint quartered grape tomatoes

1medium diced zucchini

½ tsp of salt

1 diced medium onion

1 diced yellow bell pepper

3 tbsp + 1 tsp olive oil, extra virgin

Instructions:

In a cast iron pan, over high or moderate fire, heat half the oil until it is just hot. With salt, sauté the onion and bell pepper and stir this until it is soft for five minutes.

Next, add the tomatoes and zucchini and sauté these for between four to five minutes, stirring until these are fully cooked. Stir in pepper, salt and cilantro to taste. Over low heat in a cast iron pan, heat the other half. Next, crack the eggs into the pan and without a cover, cook until the egg white becomes solid, which will take between three and four minutes. Serve these while hot. With vegetable confetti, pepper and salt, garnish the plated dish.
