In a cast iron pan, over high or moderate fire, heat half the oil until it is just hot. With salt, sauté the onion and bell pepper and stir this until it is soft for five minutes.
Next, add the tomatoes and zucchini and sauté these for between four to five minutes, stirring until these are fully cooked. Stir in pepper, salt and cilantro to taste. Over low heat in a cast iron pan, heat the other half. Next, crack the eggs into the pan and without a cover, cook until the egg white becomes solid, which will take between three and four minutes. Serve these while hot. With vegetable confetti, pepper and salt, garnish the plated dish.
